The Great Summer Cookout

Summer is really heating up and it’s time to get out of the kitchen and into the backyard to get your grill on! You won’t believe that this meal goes from raw to ready in 20 minutes or less with Epicure Meal Solutions. We love making summer fresh meals easy and stress-free because isn’t that what summer is all about?

THE MENU

Easy Mess-Free Microwave Corn

Let’s start with fresh corn, ready in just five minutes in the microwave! This is one of our fave summer hacks and it truly is a game-changer. Just cut off the ends, pop the cobs in your silicone steamer (with the husks on), and when they’re ready you’ll be able to cleanly pop the cob out of the husk, leaving the sticky, silky threads behind.

Feisty Green Sauce

Next up, let’s layer on the flavour. Feisty Green Sauce adds a punch of mild heat to your corn and makes good food even better. Hot tip: slather this sauce on grilled meats to level up the flavour!

Creamy Potato Salad

No summer cookout is complete without the Creamy Potato Salad! This potato salad is delicious served at room temperature, but if you prefer a cold salad, simply cover and refrigerate before serving. Add Better Than Bacon Topper right before serving. 

Smokin’ BBQ Chicken & Veggie Skewers 

Sauce

  • 1 pkg Smokin’ BBQ Sauce Mix

  • 1½ cups ketchup

  • 1 cup unsweetened apple sauce

  • 1 cup water

Skewers

  • 1 lb (450 g) boneless, skinless chicken breasts, about 2 breasts

  • 2 bell peppersSea Salt (Grinder), to taste

  • Black Pepper (Grinder), to taste

INSTRUCTIONS

  1. In a Multipurpose Pot, combine mix, ketchup, apple sauce, and water.

  2. Partially cover; over medium heat, cook sauce 15 min for flavours to blend. Stir often. If making ahead, cool and refrigerate up to 1 week.

  3. Preheat grill to medium-high.

  4. Cut chicken into 1" cubes. Chop peppers into chunky pieces. Alternately thread onto skewers. Season with salt and pepper.

  5. Place skewers on grill; rotate often until lightly charred and chicken is cooked through, 10–12 min. Liberally brush sauce on grilled meat near the end of cooking.

DIY Ice Cream Sundae Bar 

Grab pints of ice cream or make Nice Cream and serve it up as a DIY Ice Cream Sundae Bar. Use Caramel and Fudge Sauces and chopped up Chocolate Bliss Brownies, and don’t forget the sprinkles—Tutti Fruity and Cocoa Crunch Whole Food Toppers!  

Caramel Sauce

  • 1 pkg Caramel Sauce Mix

  • 1 cup whipping cream

  • 1/4 cup butter

Chocolate Fudge Sauce

  • 1 pkg Chocolate Fudge Sauce Mix

  • 1 cup whipping cream

INSTRUCTIONS

Caramel Sauce

  1. In a Multipurpose Pot, whisk sauce mix with whipping cream and butter. Bring to a boil, stirring often.

  2. Reduce heat to medium; simmer for 3–4 min, stirring often. Chill before serving; sauce will thicken as it cools.

Chocolate Fudge Sauce

  1. In a Multipurpose Pot, whisk sauce mix with whipping cream.

  2. Bring to a boil. Reduce heat to medium-high and continue cooking for 3 min. Chill before serving.
