The Caesar, reinvented

We’ve upped our brunch game lately and it’s time to reinvent the Caesar (or Bloody Mary, if you will). Not that we’re tired of the old standard – we’ll still see each other every now and again. You’ve seen us through many plates of bacon ‘n eggs, lengthy catch-ups over bennies and you do pair perfectly with a toasted Western sammie. But we’ve changed, and so has brunch. So, in honor of National Caesar Day (and for the love of brunch), we’re giving the Caesar a new look and taste—for these #StayHome times—that will take it next level.

Welcome to the modern Caesar

Ok, it’s still basically juice + vodka, but forget your preconceptions and let’s start fresh, with “fresh” being the key here. Let’s replace the salt-packed, colour dyed (oh! Red 40) clam juice with a vibrant plant-based juice that’s vividly green! (Hint: you need a blender.)

Easy being green OR Green Power

We like to think of this as a cocktail elixir. Dare we say a cocktail can be healthy when it almost gives you a serving of veggies? Debatable for sure, but this healthy-ish juice speaks to our desire to eat more veggies and feel good about what we put in our bodies. It’s packed with arugula, parsley, and tomatoes plus smoky Spanish paprika. Add in the garnish – cucumbers, more tomatoes, and pickled veggies – and you’re practically quaffing a salad.

Cocktail with benefits anyone?

The secret ingredient here is Super Greens Smoothie Booster. It’s made with organic wheatgrass, kale, spirulina, broccoli, and green tea powder. It’s a source of antioxidants and fibre. Cheers to that!

Texture is important

You know how Clamato juice is kinda thick and viscous in the mouth? You either like that or you don’t. What makes this juice so different is that it’s velvety vs. thick and has a lean ‘n clean finish. You’ll definitely want to strain the juice before using it. It’s not that tricky or time-consuming – and the leftover pulp is smoothie gold! Save and add to green inspired smoothies (try Oh, Good Green! Smoothie) or bulk out soups or pasta sauces.

Go easy on the garnish

This is full-flavoured and doesn’t need to hide under a lot of garnish. Keep it light and fresh: herb sprigs, cooling cukes, lil’ grape tomatoes or pickled beans. Definitely go to town on the hot sauce though! And please, let’s never, ever, ever serve a Caesar with a giant skewer of burgers, wings, fried chicken or whatnot ever again!

Best food pairings

Caesar loves brunch. Because it’s tangy and herby, it pairs well with big bold flavours. Try it with shakshuka, a frittata loaded with veggies and sharp cheese, savoury waffles, or poached eggs with meatballs.

Best time to drink a Caesar?

This is a daytime cocktail. It’s hearty, almost like pre-food. It’s meant to quell the hanger before you slide into brunch or tuck into a light late afternoon bite. Best enjoyed with friends and good conversation. Avoid after 5:00 pm – that’s gauche! 😜

Super Greens Caesar Elixir

Amp up your brunch game with a fresh twist on the classic Caesar. If you like it peppery, use arugula. For a milder green juice use spinach. Makes 6 cocktails.

Ingredients

2 tomatoes

1 lemon

1 lime

4 cups lightly packed baby arugula or spinach

2 cups lightly packed fresh parsley or cilantro leaves

1 cup cold water

2 scoops Super Greens Smoothie Booster

1 tsp Smoked Spanish Paprika (optional)

1 tsp celery salt

Ice cubes

9-12 oz vodka

Hot sauce, to taste

Worcestershire Sauce, to taste

Toppings  (optional): Cucumber ribbons, cherry tomatoes, fresh parsley stalks, pickled green beans 

  1. Coarsely chop tomatoes; place in a blender. Cut lemon and lime in half; using the 2-In-1 Citrus Press, squeeze in the juice.

  2. Add arugula, parsley, water, smoothie booster, paprika, and celery salt. Blend on high speed for at least 1 min or until well pureed.

  3. Strain through a fine-mesh sieve. Using a Ladle, press down on solids to extract as much juice as possible. Save pulp for use another day (see tip). Straining the juice will help give it a velvety texture – it’s worth the effort!

  4. Place a few ice cubes in each of six glasses. Pour about ½ cup juice into each, and then top with 1 ½ to 2 oz (3 – 4 tbsp) vodka. Generously shake on hot sauce and Worcestershire. Stir to mix. Garnish with toppings, as desired.

Recipe Tip: Save the green pulp. Use in smoothies or add to pasta sauces or soups to bulk up fibre.
