Celebrating Cinco de Mayo, the Easy Peasy Way!

A new season has arrived just in time to celebrate Cinco de Mayo—an annual Mexican holiday. On the menu this year: our brand new Easy Peasy Tacos & Enchiladas. Before we share recipes to help you whip up a fiesta, let’s look at what this new Meal Solution is all about! 

First of all, it’s EASY:  Just add water and fry the mix in a nonstick fry pan and you’ve got four servings of taco ‘meat’, ready in 15-minutes. 

And, it’s also PEASY: This is a 100% vegan blend made from sustainable, gluten-and-soy-free, vegan pea protein. See what we did there?!

This Meal Solution has warming Tex-Mex flavours with a slow-building heat—but not spicy. It’s also a source of iron, vitamin B12, and zinc. Use it wherever you’d use ground meat in Mexican recipes—like tacos and enchiladas. Get Easy Peasy Tacos as part of our new Simple Summer Collection.

Here’s how: 

Mix 1 package of Easy Peasy Taco Mix with 2 cups hot water—it will hydrate in about 5-mintues.

Easy Peasy Tacos 

1 pkg Easy Peasy Taco Mix 

2 cups hot water 

3 tbsp olive oil 

½ lime, optional 

8 corn tortillas or taco shells 

Toppings (optional):  

Guacamole, Poco Picante Salsa, diced red onions, shredded lettuce  

1. In a bowl, combine mix and water; set aside to hydrate, about 5 min.  

2. In a large nonstick fry pan, heat oil over medium-high heat. 

3. Add hydrated mix; cook, stirring often, until liquid has been absorbed, about 5–7 min. Stir gently to avoid mashing.  

4. Using 2-in-1 Citrus Press (p. 70), squeeze in juice from lime, if desired.  

5. Spoon into tortillas and serve with toppings, if desired.  

Tip: Hydrate mix with Vegetable Broth (p. 55) for added flavour.  

Make it a perfectly balanced plate: Serve with 1 cup veggies and 2 tbsp Guacamole.

Enchiladas 

What we love most about Enchiladas is the built-in customization. Use the recipe on the pack to make black bean Enchiladas, or customize it with shredded chicken, ground meat, or Easy Peasy Taco Mix. The choice is yours! 

FR recipe  

Ingredients  

1 pkg Enchilada Seasoning (Pack of 3) 

1 1⁄2 cups water 

3 tbsp tomato paste 

1⁄2 lime 

1 tsp coconut or olive oil 

2 cans (14 oz/398 ml each) unsalted black beans 

1 cup grated cheese, your choice, divided 

4 medium tortillas 

Preparation 

MICROWAVE 

  1. In 4-Cup Prep Bowl, whisk seasoning with water and tomato paste. Microwave; uncovered, on high, 2 min or until thickened.   

  2. Using 2-in-1 Citrus Press, squeeze in juice from lime; whisk in oil. Set aside.   

  3. Drain and rinse beans. Place in Multipurpose Steamer; add 1⁄2 cup sauce. Cover; microwave on high 2 min. Using a fork, coarsely mash.   

  4. Divide bean mixture and 3⁄4 cup cheese between tortillas. Roll up and arrange seam side down in a single layer in the steamer (don’t wash). Top with remaining sauce and 1⁄4 cup cheese.  

  5. Cover; microwave on high, 6–8 min, or until heated through.  

OVEN 

  1. Preheat oven to 350° F.   

  2. In Multipurpose Pot, whisk seasoning with water and tomato paste over medium-high heat. Whisk frequently until thickened, about 8 min.   

  3. Remove from heat. Using 2-in-1 Citrus Press, squeeze in juice from lime; whisk in oil. Set aside.   

  4. Drain and rinse beans; place in a bowl. Add 1⁄2 cup sauce. Using a fork, coarsely mash.    

  5. Divide bean mixture and 3⁄4 cup cheese between tortillas. Roll up and arrange seam down in Multipurpose Steamer. Top with remaining sauce and 1⁄4 cup cheese.  

  6. Bake, uncovered, 15–20 min or until heated through and cheese has melted. 

Perfectly Balance Your Plate 

Serve with 1 cup sliced veggies, your choice.

Feisty Green Sauce

Creamy & spicy with a fiery bite from jalapeños. This brings the heat! 

Preparation: Stir 1 tbsp mix with ½ cup mayo, 2 tbsp water, and 1 tsp lime juice. Let stand 5 minutes. 

Guacamole 

Combine 3 tbsp Guacamole Dip Mix with 2 ripe avocados, peeled, pitted and mashed, and 1 tbsp lemon or lime juice. Refrigerate dip for 1 hour to allow flavours to mellow. 

Poco Picante Salsa 

2 tbsp Poco Picante Salsa Mix 

1 cup diced tomatoes 

1 tsp lime juice, optional 

Cilantro, optional 

Preparation 

Add salsa mix to tomatoes. Add lime juice and cilantro, if desired. Let stand 10 min before serving. 

Serve your fiesta with a Hibiscus Bliss Margarita 

1/2 tsp. Hibiscus Bliss simple syrup 

1 oz. tequila 

1/2 tbsp. lime juice  

Mix and shake; serve over ice.  

Rim glass with Tutti Fruity Whole Food Topper or salt.
